Asparagus and Mashed Cauliflower

Today's recipe is a 2 for 1! We're going to focus on asparagus (or as my brother calls them, asparagoose! hehe!) and cauliflower as our main tasting ingredients.

Asparagus have some unique nutrient loaded health benefits. It can help fight cancer, its packed with antioxidants, boosts brain repair, mental speed and flexibility. And it's also a natural diuretic!

Cauliflower are also a great health food as they too help fight cancer and boost brain health. They also boost heart health, is anti-inflammatory, rich in vitamins and minerals, help detox, help digestion and provide antioxidants and phytonutrients! Forks up!!!

Serving Size: 4

Ingredients:

1 bundle of asparagus

3 tbsp olive oil

1/4 tsp black pepper

1 head of cauliflower

2 tbsp garlic powder

1/2 package cream cheese (grass fed and organic)

1/2 stick unsalted butter (grass fed and organic)

3/4 tsp celtic sea salt

1/8 tsp white pepper

lemon juice optional

Oven roasted Asparagus:

  1. Preheat oven to 425 degrees

  2. Place the asparagus into a mixing bowl, and drizzle with the olive oil. Toss to coat the spears, then sprinkle with 1 tbsp garlic, 1/4 tsp salt, and black pepper. Arrange the asparagus onto a baking sheet in a single layer.

  3. Bake in the preheated oven until just tender, 12 to 15 minutes depending on thickness. Sprinkle with lemon juice.

While the asparagus are cooking. Grab a head of rinsed cauliflower. Chop or break it up into small florets and place in a pot to boil until tender at around 10 minutes. Drain and place in food processor along with butter, cream cheese, garlic, 1/2 tsp salt and white pepper. Blend until creamy.

Arrange *towers or place in two separate serving dishes for a family style dinner.

Enjoy immediately!

*To make towers, chop them asparagus in various heights. Lay down a couple tablespoons of mashed cauliflower the dipped circumference of your plate. place them by height staggering down to the shortest. Place small dollops on a few of the tops and garnish with edible flowers and an avocado rose.
