Pumpkin Pancakes
We work hard to rest even harder...That's why a morning full of the aroma of pumpkin spice is in order!

These bite sized yummies are great for the whole family because they are:
delicious
gluten-free
sugar-free
and did I mention, delicious?!

Here's what you'll need to serve 2:
1 organic banana
1/2c organic pumpkin puree
2 tbsp organic oat flour
2 non-gmo free range eggs
1/2 tsp pumpkin spice
2 drops of organic vanilla
Blend everything together and let sit for 10 minutes. Warm up some coconut oil on your griddle and drop table spoon sized dollops of mixture. Cook several minutes per side. Pour on organic maple syrup and/or my Vegan Pumpkin Spice Icing!
