Raspberry Truffles

It's Valentine's Day tomorrow and we are celebrating in Madrid in our AirBnB kitchen making yummy treats as a family.  Below are super delicious raw vegan treats that are super easy to make and extra easy to devour!

I love trying new things but once I made these treats and shared them with a few of our friends I'm thinking this may become a family Valentine tradition. 

Here is what you'll need:

High power blender that breaks down nuts into creamy goodness

Silicon ice cube trays or ones that are heart shape

Prep:

Soak 1 1/2 cup organic dates 1 hour

 

For the chocolate-

Blend:

1 cup unrefined organic coconut oil, 1/2 cup organic raw cacao powder,

drained dates. 

Creme filling

Blend: 

1/2 cup organic cashew butter

1 cup organic raspberries 

1/2 cup organic coconut oil

1/4 teaspoon Himalayan pink salt

1/2 c drained dates

1/2 organic lemon (freshly squeezed)

1/4 teaspoon organic vanilla bean caviar 

Assemble

Pour in your mixture halfway i the molds with the chocolate then a dollop of the creme.  Refrigerate to set.  Keep these in your fridge and garnish with something red and beautiful, Enjoy❣

 

PS-I usually put aside a little of the cream filling just for my baby girl so she can enjoy this treat without the stimulant of cacao.
